During winter it is time to prune the vines for a new start. Our vineyard is 53 hectares (120 acres) meaning it is 349 000 vines that our team of 10 people will have to prune for several weeks. It represents average 8000 scissors cut per day and still counting !
This work is very crucial : quality and quantity are depending on it. The worker, trained and experienced, will select and leave only 2 canes with 3 buds each on the vines, it is called the “double-guyot pruning“. At La Dauphine we believe this pruning to be the best way to start a new vintage.
